Scalia anchovy fillets are cleaned and salted as soon as possible after they are caught in order to preserve a riche flavor and a perfect texture. They are aged for at least 12 weeks and packed in extra virgin olive oil.
Note: a minor leak is possible with this kind of anchor hocking glass jar. It should not be considered a defect as it is part of a traditional and artisanal product that has been prepared this way since 1973. The jar will be shipped with extra care to avoid any possible damage.

All I can is these are the best anchovies I have ever had the pleasure of eating!  Unbelievable.  The pepper adds a nice kick but not “hot” at all.  I can’t stop myself from enjoying them!  On pasta, over eggs, in a salad, with a slice of hard cheese ……. Just lovely.

These are THE absolute best anchovy fillets.  I use them on top of pizza, as a base for pasta sauce, as a base for sauteed broccoli..............it adds a little bit of "something" to every dish - a very delicious "something".
