Our D.O.P. pecorino with truffles from Tuscany is aged for a minimum of 6 months. It is handmade from raw sheep's milk. The cheese curd is mixed with crushed black and white truffles. This cheese is firm with an ivory-colored interior that becomes darker and drier with increasing ripeness, and a reddish natural rind. The taste is salty and strong, with an intense aroma of truffle.
