A traditional semolina pasta from Sardinia, fregola is made by placing the semolina in terracotta pots and soaking it in water before hand forming it into little balls, which are then toasted in an oven. Fregola is used as a blank canvas, just like pasta, for many wonderful regional dishes, such as fregola with clams or fregola in broth.
