Living in a place with thousands of italian descendants, it was still impossible to find pancetta that was not Citterio (un-cured). Online the prices were outrageous. Fortunately one day I stumbled upon this site and must say - though I was slightly concerned that it wasn't in the round form that I was used to, on both sides of the Atlantic, it is a phenomenal product and you will know it at first bite. Do not hesitate, after a few clicks, a few dollars and a few days your perfect all'amatriciana or carbonara will be on your table!
