Our Aged Italian Pecorino Toscano aged 60 days has a medium strong flavor. Its D.O.P designation guarantees that it is made according to the same exacting standards as the less-mature 30 days version. The extra aging produces a firmer pecorino with greater complexity and richer flavor. This is a wonderful table cheese that pairs well with our mostardas, and is a stand-out l as part of an antipasto alongside olives and sun dried tomatoes.
