At La Cucina Segreta by Olio&Olive, we continue building on the Italian philosophy of cooking: starting with exceptional ingredients and understanding how to work with them confidently.
Led personally by Italian importer and Olio&Olive founder Marco, this experience will guide you through the process of creating delicate ravioli by hand — from dough preparation to filling, shaping, and sealing.
More technical and immersive than our introductory class, this session is designed for those who want to refine their skills and gain a deeper understanding of traditional Italian pasta making.

About the Experience
This advanced session focuses on the craft of filled pasta — where attention to detail makes all the difference.
You’ll learn:
- How to prepare and roll pasta dough to the correct thickness for filled pasta
- How to create balanced, traditional fillings
- Proper techniques for filling, sealing, and shaping ravioli
- Common mistakes to avoid when working with filled pasta
You’ll then prepare your own ravioli entirely by hand, focusing on consistency, texture, and technique.
During the class, you’ll also enjoy a small selection of Italian antipasti while we continue discussing the ingredients and traditions behind what you’re making.

- Prepare fresh pasta dough suitable for filled pasta
- Create and work with traditional ravioli fillings
- Roll, fill, and seal ravioli by hand

Cancellation Policy
Payment is required at the time of booking.
As seating is extremely limited, tickets are non-refundable.
Cancellations made at least 4 days before the class date will receive a credit that can be applied toward a future La Cucina Segreta experience. You are welcome to transfer your ticket to someone else if you are unable to attend.
Cancellations made less than 4 days before the event, as well as no shows, are not eligible for credit or rescheduling.
Each seat is prepared in advance, and last minute changes prevent us from offering the experience to other guests.
In the rare event that we must cancel or reschedule a workshop, you will be offered the option of a full credit or refund.
