Scalia anchovy fillets are cleaned and salted as soon as possible after they are caught in order to preserve a richer flavor and a perfect texture. They are aged for at least 12 weeks and packed in extra virgin olive oil.

I love to put these anchovies in a salad or eat them on a cracker. I wish they didn’t have to refrigerated, but I’m told they will keep their flavor and texture better that way.
