It's Fall.  Chilly, tough to get out of bed in the morning.  
On the weekends, all you want to do is rest and nest.  The
shoes come off, the TV comes on.  But you still have to eat.  
Here's a recipe that will solve all your problems:  it will pry
you off the couch for a minimal amount of time, it will smell
great while it's cooking, and the oven will warm your home
just the right amount.  It almost compensates if you don't
have a fireplace.  And of course, it tastes great, too.

The Italians have an expression – Dolce Far Niente.  This
means "it's sweet to do nothing."  It's kind of like paradise.  
So how appropriate that we are using Paradiso hand-
harvested extra virgin olive oil, straight from Paradise Valley
in Sicily to you.  Like many Italian recipes, this one is very
forgiving.  If you're cooking Italian, then you probably have
staples like capers, garlic, and olives, either brined or dried.
Feel free to add them in this recipe.  Just make sure to
reduce the salt a bit if you do.  

As far as chicken pieces – recipes usually say to rinse the
chicken and dry it off before you put it in the pan. I don't
know what your chicken looks like, but feel free to be the
judge of whether you really need to give your chicken a
bath. It already comes packaged with a little pad
underneath to mop up after it. I've been tearing the plastic
open and putting the chicken straight into the pan for a
couple of decades now.

Potatoes – get the small red ones that you don't need to
cut, slice, or peel. Make it easy on yourself.

Engage in enough Dolce Far Niente, and you just might end
up with an entire Dolce Vita – sweet life.

But right now, roll over, put your feet on the floor and put
the chicken in the oven.
Ingredients (4 servings)

3 pounds chicken pieces of approximately the same size
1-1/2-2 pounds small red potatoes
4 onions – yellow, peeled and cut in quarters
1/2 cup of fresh herbs, chopped – parsley, sage, rosemary,
thyme, basil, oregano, etc.
optional: pitted olives, brined or dried; capers; whole cloves of
garlic, peeled; chili pepper
1/2 cup
Paradiso extra virgin olive oil
sea salt and freshly ground pepper

Preparation:

1. Preheat oven to 375F.

2. Put chicken, potatoes, onions, herbs (and optionals) in one
layer in a baking pan.

3. Pour
Paradiso extra virgin olive oil on top. Sprinkle with salt
and pepper. Toss everything so that it all gets mixed and coated
with the Paradiso and the s&p.

4. Cook about 50 to 60 minutes, basting occasionally. If chicken
pieces are thick or potatoes are big, it will take longer.

Good cold, freezes well, reheats in the microwave.
