Tuna and artichoke spread
Preparation

1. Drain the oil from the tuna.

2. Place the tuna, artichokes, mayonnaise, orange zest
and
Cardum extra virgin olive oil in a food processor
and process on medium speed until a smooth
consistency is formed. In the absence of a food
processor, mix the ingredients well in a bowl using a
fork to break up the tuna.
Add salt and pepper to taste.

3. Spread 1 ½ tsp – 1 tbsp (depending on the size of
the cracker) and arrange the crackers on a serving
dish.

4. Top each cracker with a slice of
Castelvetrano olive
and serve.

Makes about 30 crackers.  
Ingredients

10oz canned good quality tuna in oil
(we like Italian, of course)

5-6 pieces small artichokes in oil,
roughly chopped

3 tbsp mayonnaise

1 ½ tsp freshly grated orange zest

5 tbsp
Cardum Extra Virgin Olive Oil

½ cup Castelvetrano olives, pitted
and sliced

Salt and pepper

1 box of your favorite gourmet
cracker or crostini
