Parmigiano Reggiano and Grana Padano
are very similar and often interchangeable in cooking. They are both
Northern Italian hard cows milk cheeses that adhere to strict
production guidelines and were first made by monks, yet today are
still eaten in satisfying chunks or grated into the most famous
dishes: risotto, lasagna, and every kind of imaginable sauce.
Typically, Parmigiano Reggiano has a
more pronounced, savory and earthy flavor, whilst Grana Padano is
more mellow and buttery.
