The food you will find on everyone's plate on New Year's in Italy. Cotechino is a traditional large pork sausage which is boiled and usually served alongside mashed potatoes and lentils (for good luck in the new year) during the holidays. Golfera's cotechino has IGP status and is produced in Modena, where the dish originates. This cotechino is ready in about 35 minutes and is simply boil-in-a-bag and ready to go.
