Angelo Parodi tuna fillets are fished from the Atlantic and Indian Oceans in the summertime, when the flesh from the tuna is most tender. The fillets are carefully selected for quality before they are packaged by hand in jars (so as to avoid compressing the supple fillets), and dressed with very high quality olive oil.
