It is also important to note that these anchovies do require some extra work to remove the backbone and tail, but the extra work and time to soak these anchovies in cold water for 15-20 minutes before using, yields a flavor that is out of this world.

I learned about salt packed anchovies more years ago than i am comfortable stating here...
They take more work than oil packed tins or jars but it's worth it.   Everyone i have ever served them to has agreed,

The folks at your firm were exceedingly accommodating and agreed to jump through a hoop or two to mail them to me at my home in the US Virgin Islands. the packing was exemplary; you did a great job. It is the only anchovy product I have been willing to use for the last 20 years so I know the product well. thee is a bit of rust around the rims at the top and bottom of each can. I opened one of them and repacked the contents in a glass containedr which I refrigerate. The other can is in a dry container in my wine room at about 58 degrees
